Fast and easy to make, you and your group will never want to eat from a can again. Lunch or Dinner, it will be the hit of the meal every time.
Why are we attempting this recipe? We are on a mission to try every recipe in Kent Rollins cookbook A Taste of Cowboy while we are camping. We agree with Kent, it is much better than a canned Sloppy Joe.

Who
says it has to be from a can?
1 ½ pounds ground beef
1 yellow onion, diced
1/3 cup light brown sugar
1 (10-ounce) can Ro-Tel Diced Tomatoes & Green Chilies
½ cup store-bought barbeque sauce or Sweet Heat Barbeque Sauce (See Recipe Section Below)
1 tablespoon yellow mustard
¾ to 1 cup shredded pepper jack cheese or your favorite shredded cheese
6 or 8 hamburger buns
1 cup ketchup
1 cup tomato sauce
¼ cup light brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons yellow mustard
2 tablespoons prepared horseradish
2 tablespoons apple cider vinegar
2 tablespoons hot sauce
1 tablespoon lime juice
2 teaspoons liquid smoke
1 teaspoon smoked paprika
¼ to ½ teaspoon cayenne pepper
In a 12-inch cast iron skillet, cook the beef over medium-high heat until browned, about 10 minutes. Drain the grease
Stir in the onion, brown sugar, Ro-Tel, barbeque sauce, and mustard. Reduce the heat to medium-low and simmer for about 10 minutes, stirring occasionally, until heated through and the flavors combine
Slowly mix in the cheese and let cook for a few more minutes, until the cheese begins to melt
Spoon the mixture onto the hamburger buns. Serve warm
In a medium saucepan, combine all the ingredients and whisk well
Cook the sauce over medium-low heat for about 10 minutes, or until warmed through, stirring occasionally. The sauce can be served warm, at room temperature, or chilled
The Sauce can be made ahead of time.
