Kent Rollins sells this premade in a jar(Green Chile Chipotle Relish), which is delicious and convenient. But if you want to make your own relish, this is for you.

Just the right amount of kick!
1 (7-ounce) can chipotle peppers in adobe sauce
1 (10-ounce) can Ro-Tel Diced Tomatoes & Green Chilies, drained
1 (4-ounce) can green chilies
1 cup sugar
Remove the chipotle peppers from the can and dice
In a medium saucepan, combine the diced chipotle peppers with adobe sauce with the Ro-Tel, green chilies, and sugar. Cook over medium heat for about 10 minutes, stirring frequently, until the sauce thickens slightly and is warmed through. Cool to serve
Adding a little more sugar will help balance out the heat if it is a little too hot. Also you can use a mild Ro-Tel.
