This recipe is easy to make, and the longer you let it sit, the better it tastes. Well worth the wait I can assure you. This makes a great side (or topping) to our Sloppy Joes.
Why are we attempting this recipe? We are on a mission to try every recipe in Kent Rollins cookbook A Taste of Cowboy while we are camping. A cabbage side worth tasting.

No Oven, No Mess. Just make and chill and you have yummy cabbage!
1 (16-ounce) bag coleslaw
6 Roma tomatoes, chopped
2 medium purple onions, chopped
1 (12-ounce) jar diced pickled jalapenos, drained, juice reserved
3 tablespoons lime juice
Celery salt or garlic salt
In a large bowl, mix the coleslaw, tomatoes, and onions together
Begin by adding ½ cup diced jalapenos to the mixture. Add the lime juice and celery or garlic salt to taste
Cover and place in the icebox for about 6 hours or over-night to let the flavors mingle. The longer it sits, the juicier it gets
